March 4th - 8th: "Start Your Engines" with School Breakfast!

It's National School Breakfast Week!

The #NSBW19 theme is “Start Your Engines With School Breakfast,” which is designed to show parents, students, and school officials the benefits of fueling up for the day with a healthy school breakfast. Decorate with race cars and breakfast themed items. Congratulations to Cecilia Kless, New Manager Intern

Cecilia has been working with Clay County Food & Nutrition Services for 14 years.

She has worked at Orange Park Junior High and Coppergate Elementary where she rotated throughout all positions of the kitchen. Cecilia says that she looks forward to learning the policies and procedures of FNS, and hopefully get the opportunity to practice all of the training, if she manages her own school one day. In her free time, Cecilia enjoys playing tennis.

Congratulations to Misako Davis, FIE Support Employee of the Week

Ms. Davis works at Fleming Island Elementary as a Cafeteria Assistant. She works hard behind the serving line ensuring that all students have a healthy meal! She always has a smile on her face and is a hard worker! Congrats Misako!

National Wear Red Day

In celebration of heart health month FNS employees dressed in red for National Wear Red Day on February 1st.

Literacy Week

Literacy Week is the perfect opportunity for nutrition education in the classrooms! FNS Registered Dietitian read to students at PES. Students saw literacy week decorations throughout the serving lines.

Coming in April...District Wide Milk Mustache Photo Contest to Promote Dairy!

During the month of April, students are encouraged to take a picture in their cafeteria, during our milk mustache photo contest in celebration of Dairy Month! Choose fat free or low fat milk or yogurt and cheese, as snacks to get your daily dose of calcium and Vitamin D!

Spanish Potato Omelet

Topped with melted cheese and diced tomatoes, this yummy breakfast dish is made with your slow cooker.

Ingredients

  • Non-Stick Cooking Spray

  • 1 pound russet potatoes, peeled and cut into ¾-inch pieces

  • 2 tablespoons olive oil

  • ½ cup chopped onion (1 medium)

  • ¾ teaspoon salt

  • ¼ teaspoon black pepper

  • 12 eggs, lightly beaten

  • ½ cup shredded reduced-fat cheddar cheese (2 ounces)

  • ½ cup chopped tomato (1 medium)

202 calories; 12 g fat(4 g sat); 1 g fiber; 11 g carbohydrates; 12 g protein; 46 mcg folate; 284 mg cholesterol; 1 g sugars; 575 IU vitamin A; 11 mg vitamin C; 102 mg calcium; 2 mg iron; 389 mg sodium; 343 mg potassium


Preparation:

Prep: 20 Minutes. Ready in: 2 hours 50 minutes.

  • Line a 3½- or 4-quart round slow cooker with a disposable slow cooker liner. Coat the liner with cooking spray. In a large skillet cook potatoes in hot oil over medium heat about 5 minutes or until lightly browned, stirring frequently.
  • Add onion; cook for 2 to 3 minutes more or until onion is tender, stirring frequently (the potatoes should still be firm).
  • Transfer potato mixture to the prepared cooker. Sprinkle with salt and pepper. Pour eggs on top of potato mixture; stir gently to distribute potatoes evenly. Cover and cook on low-heat setting about 2½ hours or until eggs are set.
  • Using a knife, loosen omelet from disposable liner; transfer omelet to a plate. Sprinkle with cheese. Cover with foil and let stand for 5 minutes to slightly melt cheese. Cut omelet into 8 wedges. Top with tomato. Serve warm or at room temperature.
