Notes from our leader
Can’t believe it is November already. Where has the year gone? The holidays are upon us, time to get together with friends and family and be thankful for the blessings we have received.
We held a members' survey on whether to hold an in-person holiday party at the Squalicum Yacht Club or hosting it on Zoom. Hope you took the time to vote on this issue.
Our travelogue this month is presented by Andy and Michelle Goerdel. They were in Egypt just before the pandemic struck and Andy took some lovely photos. I just returned from Egypt and look forward to seeing their photos of the pyramids, tombs, temples and artifacts.
The board is thankful for all of those members who have renewed their membership and given donations to the Scholarship. We hope we can start having in-person events soon but in the meantime will continue with Zoom presentations. If you have any suggestions or comments on what events you enjoy or would like to see us host, please give me a call or email. We would like to start having a luncheon with speaker again but haven’t quite figured out the logistics. If you have any suggestions on where to host this event, we would love your input.

A New Travelogue!
It’s time to travel to Egypt and Jordan with Andy and Michelle Goerdel. They will share their entertaining set of slides via Zoom

Our Annual Holiday Party!
A survey of members yielded a preference for a Zoom party over an in-person party for the second year. We will again have music, shared stories, awful sweaters, and whatever refreshments you can find in your pantry.
Here’s hoping that next year will be back to in-person normal. Meanwhile, hold the date

WRITER'S GROUPS
The first writer’s group of six (five at present) has an opening for one writer.
We have decided to keep our group all female. We meet on second and fourth Thursdays from 2p.m till about 4 p.m. If you would like to be part of a supportive group where your writing can be heard and receive feedback, as you wish, at every meeting, we welcome hearing from you.

COOKING FOR ONE (OR TWO)

Uncle Keith was the brother of WWURA member Lynne Masland. During the Vietnam War years, he attended Chinese language school in Monterey, California. As it often seems to happen with military assignments, he then ended up in Japan’s Okinawa territory. There seems to be some question about the ensuing utility of his extensive Chinese speaking and writing skills, but Keith definitely made use of lessons he learned about Chinese culture. He especially loved the food, including a chicken recipe he often made for Lynne over the years. “Uncle Keith’s Chinese Chicken” has become a favorite of an ever-expanding number of Bellinghamsters, courtesy of Lynne, who has, in recent times, taken on the responsibility.
Lynne especially likes that it is a recipe that can be expanded to any number of people just by proportionally increasing the chicken and the sauce ingredients.
Uncle Keith’s Chinese Chicken (for one)
Boneless chicken breasts or sliced chicken tenders (about 1/3 pound) 1/8 cup soy sauce
½ cup red wine
½ cup water
1 small onion, sliced
Salt, pepper, and garlic or garlic powder to taste 1 tablespoon cornstarch
Instructions
- Brown chicken breasts in butter or olive oil. Salt, pepper and garlic them, then turn.
- Add soy sauce, red wine, water, and sliced onion. Simmer for 1 hour.
- Remove chicken, place on plate or in pasta bowl over cooked rice.
- Add cornstarch to the liquid in sauce pan. Stir to thicken into gravy. Pour gravy over chicken and rice.
- Serve with salad or green vegetable such as spinach or peas
For the Rice:
- In a sauce pan, combine 1/3 cup rice, 2/3 cups water, and a small shake of salt. Bring to a boil, cover the pan tightly, then cook on a lower heat for 15 minutes. Fluff with a fork before serving.
Tips
- Lynne prefers to use low sodium soy sauce.
- I found it necessary to thin the sauce with water before serving.
