pumpkin roll

3/4 cup cake flour
1 1/2 of teaspoon ground cinnamon
1 1/4 teaspoons ground ginger
3/4 teaspoon ground allspice
6 large eggs separated
1/3 cup granulated sugar
1/3 cup light brown sugar packed
2/3 cup canned pumpkin
1/8 tea spoon of salt
sift the flour cinnamon ginger and allspice into a small bowl beat the egg yolks granulated sugar and brown sugar with an electric mixer until very thick add pumpkin and mix on low setting blend well blend in dry ingredients in separate bowl beat egg white and salt until stiff but not dry fold into cake batter onto 15 x 10 x 1 baking sheet lined with parchment paper sprayed with vegetable spray bake 15 to 18 minutes or until tester test clean allow cake to 10 minutes prepare tea towel with dusting of powder sugar turn cake onto prepare towel dust cake with powder sugar roll cake up in towel and allow to cool completely

1 package of cream cheese
1 cup sifted powder sugar
6 tbsp. butter softened
1 tsp of vanilla extract
powder sugar for dusting
beat cream cheese until smooth add powder sugar to cream cheese mix until well blended add vanilla extract
un roll cake spread filling over cake and reroll cake place in refrigerator cake with powder sugar before serving
