Creative Cooking Italian Recipe

Introduction
This is the Italian recipe that I made in Creative Cooking class this March of 2013. I picked this recipe because I really enjoy seafood (especially shrimp) and wanted to see if I could properly cook seafood since I know it is different than previous recipes I have made. The pictures that I have included within my recipe show the process in which I had to take in order to cook my recipe.
Recipe Yield: 16 Shrimp
Ingredients
These are the ingredients that were used in my recipe:
• 8 oz. pancetta, finely chopped
• 1/4 cup olive oil
• 4 cloves garlic, thinly sliced
• 16 medium shrimp, deveined
• Kosher salt and freshly ground black pepper, to taste
• 1/2 cup white wine (substituted with apple juice)
• 2 sprigs rosemary, stemmed
• 1 medium tomato, cored, seeded, and finely chopped
• Crusty bread, for serving
Procedure
Step One
Separate the shrimp skin from the shrimp.
Step Two
Chop all ingredients that require it.
Step Three
Put pancetta in a skillet over medium high heat and pour the 1/4 cup of olive oil and cook until crisp. When finished, use a slotted spoon to transfer over to a plate with a paper towel for cooling.
Step Four
Place Garlic in a skillet and cook for one minute.
Step Five
Season shrimp with salt and pepper to taste, and then place in the skillet.
Step Six
Cook shrimp until pink, and then add apple juice, rosemary, and tomato. Cook until apple juice is reduced by about half in the skillet.
Step Seven
When ready, place shrimp on a plate with a paper towel, and sprinkle Pancetta on the shrimp after making the Pancetta into bits.

Reflection
This was probably my favorite dish that I had to create in cooking class. The Pancetta added onto the shrimp was perfect and when mixed together with the apple juice, Rosemary, and tomatoes it provided the perfect amount of flavor. The shrimp were cooked perfectly and even though the recipe was somewhat difficult, with the help of my other to chefs it was simple and very enjoyable to make. Since we are not of age, the only item I recommend substituting is the red wine for apple juice. It provides the same effect and is just as good, if not, better than the red wine. I really enjoyed making this recipe and I'm sure it won't be the last time I create it.
