Chef Odette Sprenger is a professional chef who lives in The Meadows. She has over 45 years of experience cooking Belgian and French cuisine, has worked for celebrities in California and she has even owned and operated her own bistro for 19 years with her husband Herman. Chef Odette teaches monthly classes at The Grange in which she demonstrates how to create a gourmet meal, gives you the recipe and you get to enjoy eating the meal at the end. With small class sizes and a different menu prepared each time, there is much to be learned and fun to be had.

November Menu:

Celebrate Thanksgiving early with a menu of butternut squash and ginger soup topped with a lime garnish and asiago cheese croutons, Cornish Hen with ground meat, cranberries, apricots, apples and an orange glaze. The meal will be accompanied by port wine gravy, spiced red cabbage cooked in red wine, scallop fennel potato gratin, and a pumpkin cheese cake.

December Menu

Impress your out of town holiday guests with this decadent menu. The first course will include a winter salad with orange, broccoli, tomato, and sweet onion basil topped with an orange vinaigrette. Next, enjoy a butternut squash soup with an asiago crouton garnish. The main course will include individual tournedos wellington, wrapped in pastry dough filled with mushrooms and shallots. Learn to make a red wine bordelaise sauce. The meal will be accompanied by fingerling potatoes, braised Belgian endives, and finished off with a raspberry and white chocolate mousse chocolate cake!

January Menu

This month we keep it simple and cozy with a cream of lentil soup with smoked turkey and butter croutons, a Belgian endive and smoked bacon quiche, followed by a delicious apple cake with crème anglaise.
