What Would Life Be Like With Only One Parent?

Growing up with only one parent is unimaginable. My mother, Cathy, didn’t have to imagine it; she experienced it. When Cathy was only ten years old, she lost her father due to an accident involving alcohol. Ever since then her life changed; many new things were coming her way. More work, less time with her mother, different lifestyle; the list goes on and on. In this interview, she talks about growing up with an alcoholic who passed, self confidence, and many life lessons one should always remember. Growing up in her position really makes Cathy a stronger and wiser person. Please listen to what my hero has to say about growing up differently than most.

HER AMAZING PARMESAN CRUSTED CHICKEN

What you need:

  • 3/4 cup of any kind of mayonnaise
  • 1/2 cup of shredded parmesan cheese
  • boneless chicken breasts
  • 1 cup of dry bread crumbs
How to make this:

Preheat the oven to 425 degrees. Then, combine the mayonnaise and the shredded parmesan in a bowl. With a spoon, scoop the mayonnaise and cheese mixture and place it on each chicken breast. With the back of the spoon, spread the mixture evenly across the chicken breast. Once you have finished that, coat the chicken with bread crumbs. Once the oven is preheated, you can stick the chicken in. Bake for about 15-20 minutes, until the chicken is fully cooked. Enjoy!
