Beet roots and their edible leaves are packed with important nutrients including potassium, vitamin A, riboflavin, folate, and magnesium—all great for growing kids and athletes! Harvest of the Month students have been loving this Beet Smoothie! A) SNACK STRONG on roasted beets! Roasted beets are sweet and nutritious. Once roasted they can be enjoyed warm or store in the refrigerator to add to a salad or cold lunch.
