When two or more substances are mixed, the mixture is called a solution.For example salt in water will dissolve to form a solution of water and salt.When the salt is dissolved it is called the solute and the water that dissolved it is called solvent.

Water being the "universal" solvent is important because of waters polarity, it makes an excellent solvent. Molecules that have partial positive and negative charges attract water molecules. Also most substances are very easily dissolved in water.
