Food Science Class Update

Project Based Learning
Each 9 weeks we will be doing a PBL (Project Based Learning). Food Science is a Career and Technology Education (CTE) class. As a CTE course, we listen to industry requests for preparing our students to enter the workforce. A PBL address industry concern about students being able to use critical thinking to solve real world problems, work as a team, and to be able to present findings to others. So, each 9 weeks we will be doing a PBL. Each one will be based on a question that the students will research and try to address and then present to industry personnel. Our first PBL is, "Is Our Food Safe?" Currently, we are planning on having HEB microbiologist to work at the HEB Food Safety Lab to judge our presentations on October 12. I am excited to be a part of this instructional method.
Food Handler Certification-Update
This year all Food Science students will earn their Food Handler Certification. The new Texas law requires that all employees who work with food have their Food Handler Certification by September 1, 2016. By helping our students acquire this certification, they will be ready to enter work in any food handling establishment. We are waiting on the American Restaurant Association to get our Food Handler Certification program started. We should be up and running soon.
We are a Hands On Based Class
We will have 40 % of our time in the lab. In addition, instead of tests, we do 2 page layouts in which students convey their gain of knowledge from the previous unit. We have had 2 labs already, both working on using proper measurements. Our first lab was goop (see info to the right) and our second lab was biscuits. Our First Lab
For our first lab we did a recipe that used non-standard units of measurement such as a dribble, a glob, a blip, etc. Students learned very quickly how important accurate measurements are. Luckily the recipe I chose made it where no matter what measurements students used, they still ended up with a tasty treat!
