Well, what can I say? I have a fantastic group!! A really great mix of talented young ladies and gentlemen. O.K. that's a little too "Sappy" ! I look forward to working in the News room with this group and watching there creativity unfold as they write, interview, and report the inter workings of Grit Untapped.
What do we know about maple syrup?
With maple syrup production Mother Nature has total control. The best time in the North Country for sap to flow is in the month of March. Temperatures need to be warm during the day and cool at night. We are so glad Native Americans discovered sap and it's ability to become that delicious stuff we call maple syrup. Not only is syrup yummy, but it has many health benefits too!

Putting in our taps. Using a 5/6th drill bit, drilling in 2 inches, and making sure we have a slight angle.
Evaporator
Students work hard to keep the evaporator running smoothly. Fire has to be stoked and pans can never get too low.
Candies and Confections
Making maple candy is a process that takes time and patience.
