Jacob's Ricotta Cheese Cookies
Introduction
I made this Italian cookie recipe in March 2013 in creative cooking. I picked this recipe because it was something different that I have never tried before so I wanted to try it out.

Ingredients/ Equipment
Cookie ingredients:
1/2 cup of butter1 cup white sugar
1 egg
1/2 pound ricotta cheese
1 teaspoon vanilla extract
2 cups all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
Icing Ingredients:
1/4 cup milk
1/4 teaspoon butter
1/4 teaspoon shortening
2 cups confectioners' sugar
1-1/2 teaspoons lemon extract
1/4 cup candy sprinkles

In a large bowl cream together the 1/2 cup of butter and the sugar, beat in the egg, then stir in the ricotta cheese and vanilla.

Combine the flour mixture with the cheese mixture, then drop by rounded spoonfuls onto the cookie sheet.

Bake the cookies for 8-10 minutes, switch the cookie sheets on the oven levels halfway through, once taken out leave them on the baking sheet for five minutes before putting them on the cooling racks.

To make the icing warm the milk, the 1/4 teaspoon of butter, and the shortening in a small saucepan. Stir occasionally over medium heat until all solids are melted. Then remover from heat and gradually stir in the confectioners' sugar and lemon extract.

Comments
I really liked this recipe, the cookies were very flavorful. One thing I might change would be to put in a little less lemon in the icing. Although I do think instead of lemon, next time I will use orange extract.
