What Type of Grand Sauce Is This?

This is a veloute sauce, its made from veal, chicken, or fish stock and a white or blonde roux.

I'm doing a chicken veloute, so I'll use chicken stock.

You use equal parts butter & flour for the roux and however many cups of stock the recipe calls for.

Variations of Veloute Sauces

You can make almost any type of Veloute sauce. It just has to have a light stock. So chicken, veal & fish are most common.


Three different types of chicken veloutes are:

1) Mushroom, you just add cream & mushrooms

2)Supreme, just add heavy reduced whipping cream

3) Hungarian, cream & Hungarian paprika
