The Cuban sofrito ingredients are: bay leaf, cumin, oregano and are chopped into small pieces, then tomato sauce is added. The Sofrito is then, fried in oil to cook slowly for 15-30 minutes. In Cuban cuisine this is used as the basis for beans, stews, rice and other dishes such as ropa vieja and picadillo
