Ultimate Taco Seasoning

This is a quick healthy alternative to the typical taco seasoning that contains sugar.


1 tsp Garlic powder

1 tsp Onion powder

1/2 tsp Oregano

1/4 tsp Black pepper

1 tbsp Chili powder

1 tsp Paprika

1/4 tsp Red pepper

1/4 tsp Sea Salt

1 1/2 tsp Cumin, ground

Simple Ketchup

This homemade ketchup is really easy and tastes so fresh! Gluten free and dairy free and yummy your kids will love it!


1 can (6 ounces) tomato paste

2 tbsp lemon juice

1/4 tsp dry mustard

1/3 cup water

1/4 tsp cinnamon

1/4 tsp salt

1 pinch ground cloves

1 pinch ground allspice

1/8 tsp cayenne pepper, optional

Preparation


  1. Simply combine all the ingredients in a bowl and whisk well to combine. Refrigerate overnight to let the flavors develop and enjoy!

Mike Schmidt's Ketchup

1 28 oz can tomato purée
1/4 cup acv
1 t onion powder
1 t garlic powder
1/2 t season all
1 t black pepper
1/2 t powder mustard ( or more, depending on taste)
1/2 t cinnamon
1/2 t all spice
1 T lemon juice

Put it all together and simmer for 20 min.

Best. Mayo. EVER.

Once you’ve made homemade mayo its hard to go back to the store-bought kind! Make this special for any recipe by adding fresh herbs or lemon too!

NOTE - Make sure you use LIGHT olive oil not EVOO. Feel free to add your favorite fresh herbs to the mix. If you want less olive oil flavor, you can substitute avocado oil over the olive oil. We prefer avocado over olive personally)


  • 1-1/4 cup of light olive oil, divided.
  • 1 egg
  • 1/2 teaspoon mustard powder
  • 1/2 teaspoon salt
  • 1/2 to 1 lemon, juiced

Add everything in a blender but for the oil, don’t add it in all at once. You want to add a little, blend, add a little more, blend etc.

Creamy Onion Salad Dressing

This is a delicious salad dressing with a smooth sweet onion flavor.


2 tablespoons red onion

1/4 cup apple cider vinegar

Stevia to sweeten

1 teaspoon mustard powder

1/2 teaspoon sea salt

1/2 cup olive oil


Place onion, vinegar, agave, mustard powder and salt in blender and puree on high speed for 20 seconds, until smooth. Turn on blender and drizzle in olive oil.

Basil Salad Dressing

This salad dressing has a fresh basil flavor.


2 ounces fresh basil

3/4 cup Extra Virgin Olive Oil (EVOO)

1/2 tsp sea salt

1/2 tsp pepper

1 tsp lemon juice


Blend all ingredients on high speed until it is smooth.

Creamy Avocado Salad Dressing

This rich and creamy dressing is amazing on any salad.


1 avocado

3 tablespoons olive oil

1 tablespoon lemon juice

1/2 cup water

1/4 teaspoon sea salt

1/4 teaspoon pepper


Place avocado, olive oil, lemon juice and water in blender. Puree until smooth. Then blend in salt and pepper.

Lemon Garlic Salad Dressing

This simple dressing has a fresh and light flavor!


1/2 cup Extra Virgin Olive Oil (EVOO)

1 lemon; juiced

3 garlic cloves

S+P to taste


In food processor or chopper, combine 1/2 cup olive oil, juice of 1 lemon and 3 garlic cloves chopped. Add salt and pepper. Blend until there are no garlic pieces left. Set aside in refrigerator.

Barbeque Sauce with a little Kick

1 - 2 cloves garlic, crushed

1 large sweet onion, finely minced (I prefer a sweet GLOBE onion)

1/4 C EVOO

1 tsp pink Himalayan Sea Salt

1 tsp dry mustard

1 tsp paprika (I like Spanish)

1 tsp chili powder

1/2 tsp fresh ground black pepper

1 1/2 C water

1/4 - 1/2 C Apple Cider Vinegar (more makes it more tangy)

1 TBSP Worcestershire sauce (read the label - many brands include WHEAT which contain GLUTEN) I use 356 Whole Foods brand

1 TBSP fresh grated horseradish OR MORE to your liking (if you buy it prepared it will usually have white vinegar - choose one without)

1 can (6 0z) tomato paste


In a saucepan, cook the garlic and onion in the EVOO for a few minutes

Stir in the spices. Add in the water, AC vinegar, Worcestershire sauce and horseradish and stir to combine. Let the mixture simmer for 15 - 20 minutes.


Wisk in tomato paste and let simmer another 5 - 10 minutes. I continue to cook it down until I have the THICK consistency that I prefer. Play with it until you like it! Add more horseradish and or Worcestershire sauce for the zing you like!


Let the mixture cook, transfer to a jar with a tight-fitting lid, and store in the refrigerator. The taste develops so I like to make this the day before! And I make it in a 4X batch!

Each 2 TBSP serving is approximately 3 g of carbohydrates (read SUGAR) and 1 gram fiber for a total of 2 grams of usable carbs. No protein.


NOTE: Your average commercial BBQ sauce has between 10 & 15 grams of carbs (read SUGAR) per 2 TBSP serving. Who stops at 2 TBSP? This is so yummy and really good for you. I always dry rub my meats over night, cook the next day, and serve sauce on the side.

Green Goddess Salad Dressing

This is such a creamy dressing you can use it for salads or dipping veggies. Yum!


1 avocado

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 tablespoon lemon juice

1/2 teaspoon herbs de provence

1/2 sea salt

1 cup water


Place all ingredients in a blender. Process on high speed until smooth and creamy.

Chef Schmitty Ranch Dip and Ranch Salad Dressing

DIP:

1/2 cup homemade mayonnaise (recipe for mayo below)

1 tsp dry minced onion

1/2 tsp onion powder

1/2 tsp Himalayan salt

1/2 tsp dried Dill spice


For DRESSING:

Follow the above steps but add a little bit of water to thin it out. Less it more, so only add a TINY amount of water at a time (not even 1/4 tsp at a time).

Roasted Garlic Aioli

Combine all ingredients in food processor and mix!


2 eggs
4 TBSP olive oil
1 TBSP lemon juice

1/2 avocado

1 TBSP minced onion (diced)

1 TSP dill weed

1 TSP Himalayan or sea salt

1 TSP onion powder

1 TSP garlic powdr

10 cloves roasted garlic (add a drizzle of olive oil, sprinkle 1/4 TSP salt, wrap in foil and bake in oven on 400 for 20 minutes)

Hot Sauce by Mike Schmidt

Mix tomato paste with ACV and water to thin it out

Add a little lemon juice, cayenne pepper to your liking
Salt and pepper
onion powder
and a finely chopped jalapeño (use the amount of jalapeño that works for you)
Put it in a sauce pan and simmer until everything is combined.
Add whatever spices you like (the paste, ACV, and lemon juice is your base).
