A Recruitment Message from Bob Friesen
Don't think you're ready yet?...You will be!
Every year, a good portion of our incoming level one students prepare for Chefs School by taking our two-week Preparatory Course, which teaches them everything they need to know about knife skills, how kitchens work, and cooking basics (how to make bread, pasta, sauces, etc.) before they officially begin the program.
The Preparatory Course is a great opportunity for incoming students who may not have restaurant experience to prepare themselves for long-term success in our program. With the prep course, new students begin to develop their knowledge and confidence while learning from their instructors and meeting their classmates. By the end of the preparatory course, students are ready for school.
We encourage anyone interested in becoming a student at the Stratford Chefs School to find out more by booking a personal visit with us. This event is a standing cocktail party; a celebration of SCS over its 30 year history.
Faculty Update: Ian Middleton
Instructor: Preparatory Course, Culinary Management, Food Costing, Cookery, Sanitation, Lab Packages, and Student Liaison.
Born and raised in Thunder Bay, Ian’s culinary adventures began more than 20 years ago while working his way through university. Having worked in many aspects of the restaurant business, Ian felt it was time to hone his skills and enrolled in the Stratford Chefs School in 1999.
After completion of his studies he spent time in London, England, working in a Michelin-starred restaurant to gain more experience. Upon returning to Canada, Ian became the Chef of Pazzo Ristorante and Pizzeria, then joined the culinary team at Down the Street, worked as the Pastry Chef at Bijou Restaurant and currently holds that position at The Bruce.
His work at the Stratford Chefs School has included purchasing, marking, assisting the Pastry Instructor, and teaching Practical Cookery, the Preparatory course and March Break Culinary Camp.

The 2016 Garlic Festival: Volunteers Needed!
The Stratford Garlic Festival is currently seeking current students and alumni to assist in cooking demonstrations with members of the local culinary community, and two headliner Chefs Massimo Capra and Laura Calder on September 10th and 11th!
The Garlic Festival is a weekend-long event, which includes multiple cooking demonstrations, as well as a local Celebrity Chef Cooking Competition held on Sunday September 11th at 10:30am.
