Why does a chef have to work so long time. I am a chef and have worked for 10 years.

I have to work at least 10 hours over and usually work 12 hours per a day. According to Gateway Gourmet, " one of the first things every new or aspiring chef hears is how long the work days are. Chefs and cooks are notorious for working between 50 and 70 hours per week, oftentimes on weekends, evenings, and for up to 12 hours per day. The rate of burnout is high, and many cooks suffer from physical problems that make it difficult to stay in the field for an entire lifetime."

There is so sad story.


According to CHEF SANDWICH, "Nathan, 23, became so exhausted after working 100 hours a week as sous chef at the Tate Modern, he died after contracting tonsillitis, his distraught family said. He came down with a sore throat but continued to work 14 hours a day - 98 hours a week - for 27 straight days without any time off, it has emerged.
He died in his sleep, and doctors say his immune system had simply shut down."

The serious problems is that there are a lot of students who don't know how chef is difficult job. As a result, so many students will be chef who have to work long time or give up the job.


I also have seen so many chefs who are married change their job because they do not have time to stay their family.


The reason A chef has to work long time

  • To learn high skill, so they sacrifice themselves.
  • A chef gets low wage comparatively than other jobs
  • There are so many extra jobs in the kitchen


The result

  • Health problems
  • No family time
  • Change the job

How can we improve the working condition

Because I am a chef so I always think how I can solve this problem. The most important thing is that owners have to change their mind of management. That means they have to share profits with staff and improve working environment. I know the owners can give high salary when they can make profits however the restaurant which is small can not make huge money thus they can't share the profits. There are so many tax and high food cost thus the government need to reduce the tax for small restaurants
