Evaporation and Wind
Investigate, observe and describe how water left in an open container disappears (evaporates), but water in a closed container does not disappear (evaporate).
Evaporation is a type of vaporization of a liquid that occurs from the surface of a liquid into a gaseous phase that is not saturated with the evaporating substance. The other type of vaporization is boiling, which is characterized by bubbles of saturated vapor forming in the liquid phase.
When water in an open container is heated up the water inside has its molecules move at such a degree that the water changes phases from being a liquid into a gas and without a lid the vaporized water molecules escape into the air. If the container had a lid than the water would be trapped in the container since there would be no place for the water to escape to.

Take a deep breath and then exhale onto your hand. What you just breathed in was air and it is essential for life. What you felt as you blew onto your hand was something called wind and wind is just air that happens to be moving. Wind can range from being a small breeze to a powerful force of nature.

As you can see by the steam escaping out of the coffee cup when water is heated up to a certain point it becomes a gas.

Don't be worried if you see water evaporate because it is all a part of the water cycle which means that eventually the vaporized water will become water once again.
