Each spring as the birch trees throughout Alaska begin to emerge from their winter dormancy, they transport large quantities of sweet sap from their roots to their branches. The tradition of tapping birch trees for their sap dates back as far as anyone can remember. For those that are patient, you can create delicious birch syrup and candy by boiling the sap. If you don’t have the time to boil sap, it is also refreshing to just drink the sap straight from the tree!
Most parts of Alaska are likely a few weeks away from sap flow, so you still have time to prepare. Today, sap collection businesses are viable, and can rely on scientific instruments to pin-point when to tap their birch trees. But the old-fashioned way of telling when to tap works well too. Just watch your tapping trees and when there is no longer snow touching the base of the tree it is time to tap!
