What is Lecithin ^^

Lecithin is an ingredient use to reduce manufacturing time, it reduces the amount of cocoa butter used, it reduces the thickness. It makes things a lot easier to produce the chocolate.

What makes different types of chocolate taste different?

Whats in chocolate is Cocoa, Sugar and Milk. Each chocolate has different concentrations of each which makes it so that not every chocolate taste the same

Complexity of chocolate flavor

Chocolate has different taste depending on how much of each ingredient is put in or the extra ingredients put in. More sugar would make it sweeter. More milk would make it creamier. If mints are put in then its going to be minty.


According to the NY Times the Industrial Confectioners had petitioned the FDA (Food and Drug Administration) to be able to replace cocoa butter with cheaper fats and still call it chocolate. it was done in Europe and nothing happen. It's debatable and it seems like they want to come to a "chocolate revolution" because they talked about how they changed the oil to olive oil and chocolate could be the same way. They even brought up the idea of lowering the prices and just making the product better and better until it becomes better than cocoa butter.
