Radish and Chickpea Salad with Feta

Radishes are high in Vitamin C, strengthening your immune system, and high in Potassium, helping to reduce high blood pressure.

Enjoy this crunchy, zesty and delicious treat!

15 oz can chickpeas (or 1 cup dry beans)

1 bunch radishes

1 cup cherry tomatoes

4 oz crumbled feta cheese

1/2 cup chopped green onion, mizuna, arugula, italian mint, or other leafy green

2 cloves garlic, minced

2 Tablespoons olive oil

1 Tablespoon lemon juice

Salt and Pepper to taste


Remove greens from radishes and wash thoroughly. Chop radishes into quarters, and add to beans in a medium sized bowl. Slice cherry tomatoes in half and add to the mix, with feta, garlic and green leafy veg or herb of your choice- you can even use the radish greens!

Dress with olive oil, lemon juice, salt and pepper and enjoy!
