Food Swaps

Sometimes swapping 1 food for another can make a BIG difference in your diet. One of my favorite swaps is zucchini for noodles. They are so versatile! Use them to replace noodles or add them to one of your favorite things to get in your veggies! Here is one of my recent favs with Zoodles!

Zoodle Tacos

Brown 1 lb lean ground beef. Spiralize 4 med Zucchini. Remove meat from pan when brown and drain any grease. Add zucchini, 1/2 a bunch of cilantro and 2 tbsp taco seasoning to pan on med heat, cover and cook about 10 min. Add meat and 1 more Tbsp of seasoning. Cook about 10 more min covered. I seasoned with homemade taco seasoning I make. 3 Tbsp made it pretty spicy so you may want to use less. Taco seasoning recipe below. I make a large batch to keep on hand. Then I just put with Greek yogurt and feta cheese on corn tortillas.
