Give Podcasting a try, It really can be easy!!
Podcasting can be a great way for students to demonstrte their learning, tell a story, prompte something, etc. The first time I had my students to it I was stunned at how into they got and how professional they soun ded. It was just one of those assignments I felt was risky and truned out to be super cool and really easy.
We use Anchor.
