Salmonella Enteritidis

Salmonella Enteritidis is a parasitic organism which benefits from living inside the host, but it harms the host in the process. Raw eggs are very common hosts to Salmonella.


Once Salmonella strains enter the stomach via oral ingestion, they penetrate the mucosal barriers of the intestines. It targets the specialized antigen transporting membrane cells which are located among the mucous cells. Then they enter the hosts tissues, bind to the cells lining the gut, begin to grow, and use the M cells for their own use. They multiply while invading the tissue and produce an enterotoxin which causes an inflammatory reaction, leading to diarrhea. Salmonella is heterotrophic so it gains nutrients by feeding inside of the host.


Food is the most common way to spread Salmonella, and eggs are the most common food to implicate.


Infants and the elderly are at the highest risk for being affected by Salmonella as their immune systems are generally the weakest. Workers who handle food and workers who work with the chickens and the eggs are the workers who have been exposed to salmonella.


Symptoms include Nausea, Vomiting, Abdominal cramps, Diarrhea, Fever and Headache. Chronic problems can include Arthritis and Joint Swelling. Since people get Salmonella goof poisoning by ingesting contaminated food, the stomach and digestive tract are usually the most effected. The bacteria begin to live and grow in your stomach and intestines.


A person can come in contact with Salmonella at restaurants whenever their food is not cooked right.


Cook poultry, ground beef, and eggs thoroughly. If you are served these things at a restaurant send it back. Wash your hands and kitchen work surfaces and utensils with soap and water immediately after they have been in contact with these things. Avoid direct and indirect contact with reptiles. Wash your hands after handling reptiles, birds, or baby chicks. if you have Salmonella you can use Anti-diarreaheals or Antibiotics as treatments.
