These two got away before we could take a picture, but we will get them next time. Ms. Sheri was already gone for the day; however, I did text her the happy news last night.
The beautiful table flowers were created by Lida Weaver (Sam's mom - Sam is in Mrs. Pate's class). She told me I could do whatever I wanted to do with them. So, we did another drawing, and we did get their picture.
Congratulations, Carlee Swing, Landry Pate, and Debbie Serena! Enjoy the beautiful flowers!

Callie's White Chicken Chili
White Chicken Chili:
1.5- 2 lbs chicken (cube, drizzle with olive oil and season with 1 tsp each garlic powder, cumin, s&p)
-OR -use rotisserie chicken
Olive oil
1 Onion, chopped
Small can chopped green chiles
4 cloves minced garlic
4 tsp cumin
2 tsp oregano
½ tsp chili powder
½ tsp s&p
2 cans great northerns, drain and rinse
1 can corn, drain and rinse
32 oz chicken stock
4 oz cream cheese, cube and let soften
½ c Monterey jack, ½ c cheddar
OPTIONAL GARNISHES- cilantro, more Monterey jack, green onions, sour cream
Brown chicken in oil, add onion, green chiles, garlic. Cook until onions are soft. Add in spices, beans, corn, stock. Bring to boil then simmer 15 mins. Add in cheese at end. Stir until blended.
**If using rotisserie chicken, start at sautéing onions step then add chicken when you add cheese.
This soup tastes better on the 2nd day. Double the recipe for a full crockpot.
Lydia's Ham Cheese Ball
2 (8 oz.) cream cheese
½ cup chopped green onion
½ cup chopped green olives
½ lb. chopped ham (I use Boar’s Head smoked ham)
1 tablespoon lemon juice
1 cup chopped pecans
Mix all ingredients in mixer. Gather into a ball and roll in chopped pecans. Refrigerate for 2 hours before serving. Serve with crackers.
Tiffany's Chicken Noodle
INGREDIENTS
- 3 cups cooked shredded or chopped chicken breast, You can also use rotisserie chicken
- 1 10.5 oz. can condensed chicken soup
- 6 cups low-sodium chicken stock
- 1 cup whole milk
- 1/2 cup chopped celery
- 2 medium carrots, sliced
- 1 1 oz. packet Ranch dressing mix
- 12 slices of thick cut bacon cooked and crumbled
- 1 1/2 cups shredded mild cheddar cheese
- 3/4 cup cream cheese, softened
- 8 oz. Thin Spaghetti or Angel Hair - uncooked
INSTRUCTIONS
Cook the Bacon , drain , cut and crumble- set aside.
Combine chicken, condensed soup, chicken stock, milk, cream cheese, carrots, celery, ranch dressing mix, and crumbled bacon in a large Dutch oven over medium-high heat and bring to a boil.
Turn down heat to medium-low and simmer for 20 - 25 minutes.
add noodles and cheese and simmer until noodles are fully cooked.
Kelly's Sausage Tortellini Soup
Sausage Tortellini Soup
Packed of Italian sausage cooked
2 Tbsp. minced garlic
29-32 oz. chicken broth
20 package of cheese tortellini
1.5 cups of water
14.5 oz. of petite diced tomatoes
1 cup fresh baby spinach (I use the whole bag.)
1 tsp of dried basil
1 tsp. oregano
1 tsp. garlic salt
1 tsp. of parsley flakes
Put all in a large pot and simmer for an hour. Add more chicken broth if needed. Top with parmesan cheese
Debbie's Chicken Gnocchi Soup
1/2 onion, diced
1 stalk celery, diced
1 garlic clove
1/2 carrot, shredded
1 olive oil
3-4 chicken breast, cooked and diced
4 cups chicken stock
Salt, to taste
Pepper, to taste
1 tsp thyme ( I have substituted poultry seasoning)
16 oz potato gnocchi
2 cups half-and-half
1 cup fresh spinach, chopped
Directions:
Saute onion, celery, garlic, and carrot in olive oil over medium heat until the onion is translucent, and celery & carrots are tender.
Add chicken breasts, chicken stock, salt, pepper, and thyme. Bring to a boil, then add gnocchi. Gently boil for about 4 minutes, then turn down the heat to simmer for 10 minutes. Add half-and-half and spinach, then cook for another 1-2 minutes until the spinach is wilted.
My Tomato Bisque
1 (14oz) jar Prego-tomato, onion, garlic
1 (14oz) jar Classico-tomato basil (regular size jar)
1 (14.5 oz) can diced tomatoes-basil, garlic, oregano ( normal size can-not the bigger can)
1 can mild rotel
1 pint of whipping cream
1 pint half and half
Combine ingredients and heat over medium heat for about 20 minutes. Stir frequently. Or put in crock pot on Low for about 4 hours.
You can change the whipping cream to half & half and the half & half to milk for a lighter version.
Ronda's Taco Soup
1 lb of hamb meat cooked
½ onion (chopped and cooked with hamburger meat)
1 packet of taco seasoning (put in meat after cooked)
8 oz tomato sauce
1 can black beans (drained and rinsed)
1 can corn (drained)
1 can diced tomatoes (I like to use rotel)
1 packet of ranch dressing
4 cups of water
After you cook the meat mix it all together and let it simmer for about 10 minutes (sometimes I have to add more water). 😊
Serve with cheese, sour cream, and corn chips
Kelly's Chex Scotcheroos
Chex Scotcheroos
1 cup of corn syrup
1 cup of peanut butter creamy
½ cup of white sugar
6 cups of corn Chex
1 cup semisweet chocolate
1 cup of butterscotch chips
- Combine corn syrup, (I add 1 tbsp. butter), peanut butter, and sugar in a medium saucepan. Heat on medium heat, stirring, until melted and smooth. You do NOT need to bring the mixture to a simmer--- only needs to be warm, smooth, and easily pourable.
- Pour mixture over cereal in a large bowl. Stir coat evenly.
- Using a medium cookie scoop (2 TBSP size), scoop clusters and place on parchment paper or wax paper lined baking sheets. (I just sprayed the bottom of my pan and didn’t use wax paper.
- Allow clusters to cool.
- Melt chocolate chips and butterscotch chips in double boiler or microwave. I used my microwave and added a little butter to melt for 30 secs, then stir and heat them for additional 15-20 secs. Do NOT OVERHEAT THE CHOCOLATE.
- Spoon chocolate mixture over clusters.
- Allow to clusters to stand at room temperature until the chocolate hardens.
- Store in an airtight container up to a week. They also can be frozen.

Thankful for YOU!
I Thessalonians 5: 16-18 says, "Rejoice evermore. Pray without ceasing. In every thing give thanks: for this is the will of God in Christ Jesus concerning you."
The Bible tells us to give thanks in EVERY THING. Every. Thing. -- even when a child is misbehaving in the classroom? Yes. Even when a child is misbehaving. :-) Wow. Isn't that a hard idea to comprehend? God placed you in that child's life to make a difference. And you do. Every. Single. Day.
What about when you wake up late, AND you have morning duty? Do we give thanks for that scenario? There is a reason. We may not see it now, but there is a reason. I know that our good days definitely outweigh our difficult days at Magnolia :-)
I pray that you take time over this Thanksgiving break to take care of yourself. Please remember those within our school family that are experiencing difficult times with loved ones. Pray for comfort, endurance, and strength.
I pray over our entire Magnolia family for health and happiness. Please know that I give thanks for EVERY THING that we are and EVERY THING that we do.
