Hello SOAR students and families!
Repeat from last week: I encourage you all to run around and play outside in the fresh air, go for a bike ride, play games with your family, bake, dance, help with household chores and yard work and read lots of books! The purpose of this newsletter is to check in with you and to give you some ideas for ways to keep your brain challenged during these weeks at home. Everything is totally optional, but I hope you find something useful to you!

Recipe of the Week: Peanut Butter Spirals
12 oz. uncooked spiral pasta
2/3 cup peanut butter (preferably no-salt, no-sugar peanut butter)
3/4 cup water
2 Tbsp. soy sauce or tamari
2 Tbsp. balsamic vinegar
1 Tbsp. raw honey (use less if your peanut butter has sugar)
1/2 tsp. ground ginger
1/2 tsp. chili powder
1 1/2 cups frozen peas, thawed
Prepare the pasta according to the package directions; drain. Meanwhile, combine all the remaining ingredients except the peas in a food processor or blender and process until smooth. Transfer the pasta to a large serving bowl. Add the peas and sauce, stirring to combine.
