Vegan Macadamia Nut Cookies
Granola
Granola. πππ. Awesome as a topper for smoothies,
Apologies to the perfectionists out there but these measurements are all rough, so donβt get to precious about it π. I tend to
go by feel When I cookπ
-
Add the following to a big bowl:
2 cups shredded coconut
Chop 1 cup each of whatever nuts or seeds I use:
Almonds
Cashews
Walnuts
Pepitas
Macadamias (although they are expensiveπ«So itβs rare)
Sunflower seeds
Chia seeds (1 tablespoon)
Add:
2 tsp of vanilla extract
3 tsp Ground Cinnamon ( or whatever spices u like) play with itππ
1/3-2/3 cup of rice malt syrup depending how sweet u like it
This bit u need to be careful with:
Mix it all up in a bowl and place on tray in the oven under a grill to brown the top. (This can happen quickly in just a few minutes) so u must keep a constant eye on itπ.
Once the top is slightly brown, turn the mix over and repeat until the mix is all a consistent light brown in colour.
Then drop the oven temp to about 100 degrees C (212F) and leave it for about 30min or until nice and crunchy.
Once cooled , it should store for about a week in an airtight containerπ
Enjoyπ€
