Why can the withstand the cold?
These plants are able to withstand heavy frosts (25-28 degrees). They are called "Hardy Vegetables." Cold weather does not kill these plants, it simply slows down their growth rates. For every rise of 18 degrees their growth rate doubles but only in the range of 40 to 90 degrees.
