Miranda's Pictorial Bocconotti Cookies Recipe
Recipe Introduction
This is an Italian cookie recipe the I made in Creative Cooking in March 2013. I picked this recipe because I decided to make a dessert and I love cookies. These cookies look very different than America cookies, but that is just the difference in cultures. The pictures that I have included show the process of making my bocconotti cookies from start to finish.
Recipe Yield
The yield for this recipe is 12 cookies.
The prep time is 30 minutes and the total time is about 1 hour.
Ingredients and Equipment
Cookies
- 1 1/2 cups all purpose flour
- 1/3 cup granulated sugar
- 1 whole egg
- 2 egg yolks
- 1/4 teaspoon baking soda
- 1 graded lemon peel
- 1/2 cup cold butter
Filling
- 1/4 cup strawberry jam
- 1/4 cup ground almonds
- 2 oz semisweet baking chocolate, very finely chopped
Topping
- 1/4 cup powdered sugar
Special Equipement:
- a mini muffin pan
- food processor
- a zester

Procedure
Step 1
The first step I did to prepare this dish was to preheat the oven to 350 degrees.
Step 2
Make the cookie mixture.
Zest the lemon peel
Make sure to rinse the outside of the lemon.
Obtain 2 egg yolks and 1 whole egg
Measure flour, granulated sugar, and baking soda
Combine all of the above ingredients
Add Butter
Cut in the butter until the mixture begins to form a wet dough
Step 3
Form into a ball and refrigerate
Wrap the ball of dough with plastic wrap and put in the refrigerator
Step 4
Make filling. Mix jam, almonds, and chocolate.
Use a food processor to grind the almonds. Use a knife to chop the chocolate. Use dry measuring cup to measure the jam. Mix.
Step 5
Make teaspoon-sized balls
Flour your area and hands. Make 24 small balls of dough.
Step 6
Flatten 12 balls and put on bottom of mini muffin pan
This is layer 1
Add filling evenly (2nd layer) and take the last 12 dots and flatten them to create the 3rd layer
Make sure the 3rd layer is sealed with the 1st layer so the filling does not fall out while cooking or after they are done.
Step 7
Bake for 20 minutes
Make sure to use oven mitts when putting it in and taking it out of the oven.
Make sure your cooling rack and oven mitts are ready for when it's time to take it out.
Careful! It will be HOT!
After about 20 minutes, take it out of the oven
Use oven mitts! Put on cooling and let it cool for about 2 minutes.
Step 8
Sprinkle powdered sugar on
When ready to take out of the pan, be careful.
FINISHED PRODUCT
Make sure to wash dishes and counters
Recipe Refleciton
I would say this recipe was fairly easy. It was not very hard to grind the almonds and zest the lemon. It felt like it took awhile, but the steps are very understandable. Although the total time said 1 hour, it look me about 1 hour and 30 minutes to complete it.
Some recipe modifications are that you could use cherry or grape jam instead of the strawberry jam. If you did not want to put powdered sugar on the cookies, you do not need to.
