Breakfast Fig & Nut "Cookies"


-3/4 cup packed brown sugar

-1/4 cup butter, melted

-2 large eggs

-1/4 cup finely chopped dried figs

-1/4 cup sweetened dried cranberries

-1 teaspoon vanilla extract

-1 cup all-purpose flour (about 4 1/2 ounces)

-1/2 cup whole wheat flour (about 2 1/3 ounces)

-1/2 cup unprocessed bran (about 1 ounce)

-1/2 teaspoon baking soda

-1/4 teaspoon ground cinnamon

-1/4 teaspoon ground allspice

-1/4 cup sliced almonds

-2 teaspoons granulated sugar


1.Preheat oven to 350°.

2.Combine first 3 ingredients in a large bowl. Stir in chopped figs, cranberries, and vanilla.

3.Lightly spoon flours into dry measuring cups; level with a knife. Combine flours, bran, baking soda, cinnamon, and allspice, stirring with a whisk. Add flour mixture to egg mixture, stirring just until moist. Gently fold in almonds.

4.Drop by level 1/4 cup measures 4 inches apart on 2 baking sheets lined with parchment paper. Sprinkle evenly with granulated sugar.

5.Bake at 350° for 12 minutes or until almost set. Cool 2 minutes on pans. Remove from pans; cool completely on wire racks.

Black Bean Quesadillas with Warm Corn Salsa


-1 tablespoon olive oil

-2 cups chopped plum tomatoes (about 6 medium)

-1 (15-ounce) can black beans, rinsed and drained

-2 cups bagged baby spinach leaves

-4 (8-inch) whole-wheat flour tortillas

-Cooking spray

-1 cup (4 ounces) preshredded reduced-fat Mexican blend cheese

-1 cup frozen whole-kernel corn

-1 cup chopped red bell pepper

-1/4 cup chopped fresh cilantro

-2 tablespoons fresh lime juice


1. Preheat broiler.

2. Heat oil in a large nonstick skillet over medium-high heat. Add tomato and beans; sauté 3 minutes. Add spinach; sauté 3 minutes or until liquid evaporates, stirring occasionally. Remove from heat; mash beans slightly.

3. Place tortillas on a baking sheet coated with cooking spray. Top each tortilla with 1/2 cup bean mixture and 1/4 cup cheese; fold in half. Lightly coat tops with cooking spray. Broil 3 minutes or until cheese melts and tortillas begin to brown. Cut each tortilla into 3 wedges.

4. While quesadillas broil, combine corn and remaining ingredients in a small saucepan. Cook over medium heat for 2 minutes or until warm, stirring frequently. Serve warm salsa with quesadillas.

Oatmeal-crusted Chicken Tenders


-1 cup regular oats

-3/4 cup (3 ounces) grated fresh Parmesan cheese

-1 teaspoon chopped fresh thyme

-1/2 teaspoon salt

-1/4 teaspoon freshly ground black pepper

-1 pound chicken breast tenders

-Cooking spray


1.Preheat oven to 450°.

2.Place oats in a food processor, and process for 20 seconds or until coarsely ground. Add cheese, thyme, salt, and pepper. Pulse to combine, and place in a shallow bowl.

3.Place each chicken breast tender between 2 sheets of heavy-duty plastic wrap; pound to 1/4-inch thickness using a meat mallet or small heavy skillet. Coat both sides of tenders with cooking spray; dredge tenders in oat mixture. Place tenders on a baking sheet coated with cooking spray. Bake at 450° for 15 minutes or until browned.

Bert & Ernie Fruit Snacks


  • 1 mandarin
  • 2 tbsp currants
  • 4 mini marshmallows
  • 2 red Life Saver lollies
  • 1 banana, peeled


1. First off, start with Ernie. Peel the mandarin and reserve peel. Gently pull away one-third of the segments, or enough to get the fruit to sit flat on your chopping board. Using a serrated knife, cut a wedge out for the mouth. Cut 2 circles from the peel for the ears and place on either side of the head.

2. Place about 12 currants on top of the head for hair. Carefully cut the ends off 2 of the mini marshmallows (this should make them nice and sticky). Position the marshmallows for eyes and add a currant for the pupils. Place the Life Saver on top of the mandarin to become Ernie's mouth.

3. Now let's move on to Bert! Chop one-third of the banana off the bottom and shave a little off the back to make it sit flat. Cut a small slot for his mouth.

4. Cut 2 rounds of mandarin peel for Bert's ears and large oval for his nose. Place currants on for his hair and eyebrows. As before, trim the ends off the remaining 2 marshmallows and stick them to the banana for the eyes. Add currants into the centre for the pupils. Pop the last Life Saver into the mouth slot and there you go – all done!

Teddy Bear Toast

  • 2 slices wholemeal or white bread
  • 2 tbsp peanut butter (you can replace this with Sweet William Chocolate Spread in case of nut allergies)
  • 6 banana slices
  • 6 raisins


1. Toast the bread

2. Spread with peanut butter

3. Add banana slice for the ears and nose

4. Place the raisins on each slice for the eyes and in the centre of the banana nose. All done!

Yoghurt Popsicles


  • 1x 6 pack Yoplait Petit Miam fromage frais


  1. Fill ice cube trays with yoghurt.
  2. Place in freezer for 2 hours.
  3. When yoghurt is almost frozen, push sticks into cubes.
  4. Place back in the freezer until completely frozen.

Stained Glass Window Sandwiches


  • 12 slices of fresh bread
  • apricot, raspberry, blackberry or blueberry jam
  • peanut butter
  • butter or margarine
  • sprinkles
  • shape cutters (e.g. circles, stars, hearts, people)


1.Shape cutters (e.g. circles, stars, hearts, people).

    2.Remove crusts from bread.
      3.Spread six slices of the bread with spreads of choice.
        4.Use butter or margarine to make sure the sprinkles stick.
          5.Cut shapes from the centre of remaining six slices of bread and place on top.
            6.Match up cut out shapes to make little sandwiches.
              7.Serve on a large tray for maximum impact!

              Homemade Chicken Nuggets


              • 2-3 chicken breast fillets (about 600g)
              • ½ cup plain flour
              • 2 eggs
              • 4 slices day old bread
              • 1/3 cup cornflake crumbs
              • 1/3 cup freshly grated parmesan cheese
              • ½ cup mayonnaise
              • 2 tbsp sweet chilli sauce

              1. Tear bread into pieces and whiz in a food processor to get fine breadcrumbs.
              2. Slice chicken breasts into bite-sized pieces. Put the flour on a large square of baking paper.
              3. Whisk eggs in a small bowl. Mix breadcrumbs, cornflake crumbs and parmesan cheese in a bowl. Coat the chicken pieces in flour, dust off, dip in egg wash and then coat in crumb mix. You may need to press the crumbs on. Place the coated chicken pieces onto a baking tray lined with baking paper. Refrigerate for 30 minutes.
              4. Preheat oven to 180°C and bake the chicken for 10 minutes or until cooked through. To make the dipping sauce, combine mayonnaise and sweet chilli sauce in a small bowl.
              5. Serve nuggets with dipping sauce.

              Macaroni Cheese


              • 3 cups macaroni
              • 1 cup grated cheddar cheese
              • ½ cup freshly grated parmesan cheese
              • 2/3 cup thin cream or evaporated low fat milk
              • 1 teaspoon sea salt


              1. Cook macaroni according to packet instructions, it will take 6-10 minutes.
              2. When al dente, drain macaroni and return to pot.
              3. Add cheeses, cream or milk and salt to the macaroni and stir over a low heat until cheese has melted and the sauce has thickened.

              Very Hungry Caterpillar Toddler Bento Box


              • 1/2 sandwich of choice
              • 1/2 cucumber cut into rounds
              • 1/2 cherry tomato
              • 2 x small circles of cheese (eyes)
              • 2 x slivers of carrot (antennae)
              • 1 x small circle of cucumber skin (mouth)
              • 1/4 apple (sliced)
              • a few cheese pieces
              • 1/4 mandarin (sliced)
              • 2 x tbsp of yoghurt or jelly

              You will also need:

              • 1 x large square plastic lunch box or container
              • 2 x smaller squares to slot inside the larger one


              1.Place the half sandwich into the large portion of the 'bento box'. Now make a caterpillar on top of the sandwich using the cucumber rounds (body) and the 1/2 cherry tomato (head). I used a hole punch through a cheese slice to make eyes and did the same with a small sliver of cucumber skin for the mouth.

              2.Place two slivers of carrot as the antennae.

              3.Now fill the lower two boxes with the things the caterpillar munched through.

              4.I used: apples, mandarins, cheese and yoghurt (but jelly would be more accurate).

              5.See if you can get your toddler to eat it all, just like the Very Hungry Caterpillar. Don't forget the big burp!
