Chicken and Gnocchi Soup -Jason Codair
Recipe Introduction
Yield: 4 Servings
Ingredients
2 Chicken breasts, 2 cups chicken stalk, 1 cup heavy cream, 1/2 stalk celery, 2 garlic cloves, 1/4 carrot, 1/4 onion, 1/2 cup fresh spinach, 1/2 tablespoon olive oil, 1/2 teaspoon thyme, salt and pepper, 12 ounces potato gnocchi, and 1/2 tablespoon cornstarch.
Prepare chicken breast
Dice and cook the chicken breast in a large skillet over medium high heat.
Prepare vegetables
Shred the carrots, chop the garlic, and dice the onions and celery.
Combine
Add chicken, chicken stalk, heavy cream, salt, pepper, and thyme together in a large stockpot. Heat to a boil.
Add Gnocchi
Once the mix has come to a boil add the potato gnocchi and let boil for 4 minutes.
Simmer
After boiling for 4 minutes, turn down to a simmer for 10 minutes.
Spinach
Add in your fresh spinach for 2 minutes until spinach is wilted.
Cornstarch (optional)
To thicken your soup, add 1/2 tablespoons of cornstarch dissolved in 1-2 tablespoons of water.
