If you are behind in Edgenuity, or if you have not completed at least 80% of the course you will need to attend school on Fridays and work from home, if possible, until you catch up.

This Week's Teacher Feature: April Southerland
April Southerland has taught Math in both 4th and 8th grades, and she has worked for Kingsport City as an Instructional Assistant for over four years. Mrs. Southerland attended East Tennessee State University for both her Bachelors and Master's degrees. She has a Bachelor's degree in Early Childhood Education with an add on in Middle School Education, and she has a Master's Degree in Secondary Education. One of her biggest passions in life is making Math enjoyable for students to learn, and she hopes to become a Math teacher again one day. When she is not busy crunching numbers, Mrs. Southerland can be found spending time with her husband, Eric, an ER nurse, or her favorite sidekick, Charlie, their dog. Mrs. Southerland enjoys reading, listening to music, and is a fantastic cook! She enjoys challenging herself and trying out new recipes. Her passion for learning is evident from the environment she maintains in her classroom. This makes Mrs. Southerland one of D-B EXCEL's finest assets.

Chicken Azteca
2 cans black beans, drained
1 can corn, drained (or a bag of frozen corn works fine too)
1 tsp. minced garlic
3/4 tsp. ground cumin
1 jar chunky salsa
6-8 frozen, boneless, skinless chicken breast tenderloins
1 pkg. cream cheese, softened
Place chicken in the crockpot. Cover chicken with beans, corn, garlic, cumin and salsa. Cook on low for 8 hours. Stir in cream cheese. Cover and cook on high until cream cheese melts. This is also just as yummy the next day for leftovers.
