The Four Steps

  1. Clean - keep the cook places clean
  2. Don't cross contaminate
  3. Cook foods at the correct temperature - meat
  4. Keep foods that need to be cold (like meat) cold

Preparation of food

  • Wash hands any time before and after preparing food
  • Keep meat away from other foods
  • If tools come in contact with any meat, wash and don't use on other foods


  • Get rid of food left out at room temperature for more than 2 hours
  • Use cooked leftovers within 4 days
