How to Make Lamingtons

A Delicious Aussie Treat

Ingredients

Cake:

  • 1/2 c butter
  • 1/2 c caster sugar
  • 1/2 t vanilla extract
  • 3 eggs
  • 1 3/4 c self-rising flour
  • 1/2 cup milk
  • 2 c desiccated coconut (or walnuts)

Icing:

  • 3 1/2 c icing sugar
  • 1/4 c cocoa powder
  • 1 T butter
  • 1/2 boiling water

Preparation

  1. Preheat oven to 356.
  2. Grease and line pan with baking paper.

Make da Cake

  1. In an electric mixer, beat together butter, sugar, and vanilla until fluffy.
  2. Add eggs one at a time.
  3. Sift half of the flour into mixture. Stir.
  4. Add half of milk to mixture. Stir.
  5. Repeat.
  6. Spread in pan and smooth out batter.
  7. Bake for 30 minutes.
  8. Leave the cake in the pan for 10 minutes after removing from oven, then transfer to wire rack to cool (preferably overnight).

Make da Icing

  1. Sift icing sugar and cocoa powder together.
  2. Add butter and water.
  3. Stir until smooth.

Assemble the Lamingtons

  1. Cut cake into squares (about 2 inches).
  2. Skewer squares with fork and dip them into the chocolate.
  3. Roll in coconut (or nuts).
  4. Place on wire rack to set.
