Strawberry Icebox Cake

Ingredients
  • 3 cups heavy whipping cream
  • 3/4 cup strawberry jam (such as Smucker’s)
  • 1 teaspoon vanilla extract
  • 2 (9-oz.) packages chocolate wafer cookies (such as Nabisco Famous)
  • 1/2 cup fresh strawberries, halved

Directions

Instructions Checklist
  • Step 1

Beat whipping cream, jam, and vanilla with a heavy-duty stand mixer fitted with a whisk attachment on medium-low speed until fully combined, about 30 seconds. Increase speed to medium-high; beat until mixture begins to thicken, about 1 minute. Increase speed to high; beat until very thick, 1 to 1 1/2 minutes.

  • Step 2

Place a 12-inch paper doily (or a 12-inch parchment paper circle) on a cake plate. Spread a thin layer (about 1/4 cup) whipped cream mixture in a circle on doily, leaving a 2-inch border. Top with 6 wafer cookies arranged in a circle with edges touching; place 1 additional cookie in middle of cookie circle. Spread with about 1/2 cup whipped cream mixture, leaving a 1/4- to 1/2-inch cookie border.

  • Step 3

Add a second cookie circle layer with 6 cookies placed in between cookies of the first layer; place 1 additional cookie in center of second cookie circle. Spread with about 1/2 cup whipped cream mixture, leaving a 1/4- to 1/2-inch cookie border. Working quickly (so that cake doesn’t start to collapse), repeat layers until no cookies remain (about 8 additional layers), ending with a cookie layer. Spoon desired amount of remaining whipped cream mixture on top. Chill, uncovered, at least 5 hours or up to 8 hours.

  • Step 4

Decorate cake with fresh strawberries, and serve. Leftovers may be stored, covered, in refrigerator up to 2 days.

New and improved method for ACC submissions

We are excited to announce the immediate availability of the Architectural Submission & Processing feature within TownSq! In an effort to streamline the architectural submission process, this feature will remove the necessity for cumbersome paper forms, waiting on email responses and physically having to visit the management office. Once a project has been submitted using TownSq, you will be able to monitor its progress as it moves through the various stages of the submission and review phases. Once the project has been voted on, you will have access to your verdict letter directly in TownSq! In the event that a submission requires additional information or clarification, you will be able to directly communicate with the review committee to help facilitate a swift turnaround on your submission. To begin an application, please login to your community portal and select the Architectural Review feature on the left-hand side menu. From there, select “Submit Project” and fill in the necessary fields. Once the form has been completed, click “Save” at the top right of the screen to submit the project for immediate review. You will also have the ability to upload any files or pictures you may have during this process (strongly encouraged). Once your project has been submitted, simply log back in to see the status of your request in real time, anytime! Please do not hesitate to reach out for assistance with this new feature to ensure your next home project is the smoothest one yet. Use the TownSq “Requests” menu option, and a member from our customer service team or management team will be happy to assist you with any questions you may have. For New Home Construction, please visit the “Documents” section and download and complete the New Home Construction Form available. If no form is available, please open a Request and we will be more than happy to assist you. Once completed, visit the Architectural Review tab and submit.
