Zhang Zhongjing kept noticing that peoples ears were frostbitten, so he decided to wrap mutton, chilli and some warming medicinal herbs in dough. He folded them in the shape of an ear and gave them to the poor.Dumplings were first call "Jiao'er", and latter Jiaozi.
These ear shaped dumplings symbolize home and warmth.
