How to make the cupcakes

First you combine the unsweetened chocolate and water in a sauce pan over medium-low heat, stir continuously until chocolate is melted. Let cool for 2 minutes.

Then beat the sugar, vegetable oil, eggs, and vanilla in a large bowl for 30 seconds. Stir in the mascarpone mixture. Whisk the flour, baking soda, baking powder, and chocolate chips in a medium bowl, after completely mixed add the dry ingredients to the chocolate mixtures. Stir until just blended.

Divide the batter among the prepared muffin pans. Bake for 20-25 minutes. Cool cupcakes for about 1 hour before dipping in Ganache.

How to make Ganache

Place chocolate chip in a small bowl. Thencombine the heavy cream and vanilla extractin a sauce pan over medium heat. Cook until bubbles appear on the side of the cream. Pour the hot cream mixture on the chocolate chips. Using a fork gently stir until all the chocolate is melted and the mixture. Dip the tops of the cupcakes in the ganache and transfer to a baking sheet. Place the dipped cupcakes in the refridgerator to sit for about 15-20 minutes. Allow cupcakes to return to room temperature before eating.
