Creative Cooking Italian Recipe
Myles' pictorial Chicken Marsala recipe
This dish was cooked for my creative cooking class.
Ingredients and Equiptment
This is where you assemble all of your ingredients. Among those, there is:
-1/4 cup all-purpose flour
-1/4 teaspoon salt
-1/4 teaspoon pepper
-3 boneless, skinless chicken breasts
-2 tablespoons olive oil or vegetable oil
-2 cloves garlic, minced
-1 cup (3 oz) fresh sliced mushrooms
-1/4 cup fresh parsley
-1/2 cup dry marsala wine or chicken broth
Equipment list:
-Oven
-Clean skillet, 10-12 inches (variable by chicken breast size)
-Chef's knife
Step one
Mix flour, salt, and pepper in mixing bowl.
Coat chicken with flour mixture, shaking off excess flour
Step 2
Heat oil in 10-inch skillet over medium-high heat. Cook garlic, mushrooms and parsley in oil 5 minutes, stirring frequently.
Step 3
Add chicken to skillet. Cook uncovered about 8 minutes, turning once, until chicken is brown. Add wine. Cook uncovered 8 to 10 minutes, turning once, until chicken is no longer pink in center.
Issues
- the chicken wasn't cooked thoroughly enough so I covered the pan in tin foil to steam the chicken a bit
