Millet – popularly known as Bajra – is the power house of iron, calcium, vitamin B complex and dietary fibre. A popular food grain throughout India, many mouth-watering recipes can be dished out with the humble millet.
Here is an easy to make Millet Patties recipe which you can serve as a tea-time snack to your family and friends.
You will need:
Millet - 1 cup (cooked)
Carrot - 1/2 cup (grated)
Onion - 1/3 cup
Garlic - 2 Tbsp
Ginger - 1Tbsp (finely chopped)
Green Chilli - 1 (finely chopped)
Flaxseed Powder - 1.5 Tbsp
Plain Yogurt - 2Tbsp
Turmeric Powder - 1 Pinch
Salt and Pepper - As per taste
Coriander Leaves - 2 Tbsp finely chopped
Oil for shallow frying
Method
Take the cooked millets, mash it lightly using a fork and keep it aside. Now take the curd and add flaxseed powder to it. Let it sit for at least 10 minutes. This mixture will serve the purpose of binding the patties. In case you do not have flaxseed powder then you can use 1 egg in its place.
The next step is to heat the oil in a pan to which you need to add finely chopped onions, garlic and green chilli. Saute it until the onion turns transparent in texture. Once the onions turn transparent, you need to add grated carrot, turmeric and pepper powder as well as salt to it. Now cover the pan and let the mixture cook. It is recommended that you sprinkle some water in between so that the carrots turn soft and are fully cooked.
Once the carrot is cooked, you need to add cooked millets and finely chopped coriander to the mixture and mix it well. Now the next step is to add the binding mixture (curd+flaxseed powder) to the pan and finally mix everything together.
Once all the ingredients is mixed completely with each other, let it cool. Later make small patties of equal size and shape and shallow fry it, until it turns golden yellow in color.
Your tasty and healthy millet patties is ready. Serve it hot with tomato sauce!
