Crispy Grilled Cheese Triangles
- Using Wheat Bread, place cheese inbetween two slices
- Place on grittle 3-5 minutes
- Cut diagonally along the middle of the sandwhich
Scrambled Eggs With Tomato and Onion
- Melt the butter and sauté the onion and garlic for 3 minutes, stirring.
- Add the sliced tomatoes and cook until mushy.
- Beat the eggs together with the chicken stock, soy sauce and a little salt and pepper.
- Add the beaten egg mixture to the tomato and onion and cook for a couple of minutes or when just beginning to set.
- Serve on its own or with some toasted ciabatta
Gouda Roll Ups
- Place one tortilla on a plate and spread reduced-fat mayo over it with a knife.
- Lay the deli meat and the slice of Arla® Dofino® Gouda on top of the tortilla.
- Place lettuce leaves on top.
- Add any additional toppings that you and your family love.
- Roll up the tortilla with the contents inside and slice the roll into five bite-sized rolls, discarding the ends of the tortilla

Mini Meatball Bites
- Heat the oil in a saucepan and sauté the onion for 3 minutes, stirring until softened. Add the garlic and sauté for 30 seconds. Set aside to cool.
- Mix together the beef, breadcrumbs, parsley, Paremsan, tomato purée, apple and stock cube. Stir in the sautéed onion and garlic, and add the beaten egg to bind.
- Form the mixture into 25 mini meatballs. Heat the vegetable oil in a frying pan and sauté, until browned and cooked inside. Drain on kitchen paper.
Chicken Kabobs with Peanut Sauce
- For the chicken: Cut the chicken into 1/4-inch strips across the grain. Lay the strips on a cutting board and gently flatten by pounding with your fist; they will be a variety of shapes and sizes. If some slices are very long (more than three bites), you may need to cut them in two. Place the chicken in a bowl with the oil and soy sauce and turn the chicken in the sauce to coat. Let the chicken marinate at room temperature for at least 20 minutes, or refrigerate overnight.
- For the peanut sauce: Combine the peanut butter, soy sauce, lime juice, honey, scallions, garlic powder and red pepper flakes in a bowl and whisk together.
- Preheat a flat griddle over medium heat. Remove chicken from marinade, pat dry and thread onto skewers; discard the marinade. Place the chicken on the hot griddle so that the skewers are positioned away from the direct heat and cook the chicken until golden brown, 2 to 3 minutes per side. Serve the skewers with peanut sauce for dipping.
Zucchini Muffins
Into a large bowl mix:
- 2 cups all purpose flour
- 1 cup brown sugar
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1/8 tsp. nutmeg
- 1/8 tsp. ginger
- 1/8 tsp. allspice
- 1/2 tsp. salt
Stir in:
- 2 cups grated zucchini
- 1 apple peeled, cored and grated
In another bowl, beat:
- 3 eggs
- 2 tsp. vanilla
- 1/2 cup unsweetened apple sauce
- 1/2 cup oil (vegetable or canola)
Stir into flour mixture until batter is just combined.Bake at 350° for 20 minutes.
Snake Sandwhich
- To make the sandwiches. Make one white sandwich using the peanut butter and jam. Make 2 white sandwiches by spreading the bread with cream cheese and then topping with the grated carrot and chives.
- Make 2 brown sandwiches by spreading with soft butter and topping with cucumber slices.
- This makes 5 whole sandwiches
- Cut out 4 rounds from each sandwich using a 5 cm fluted cutter.
- Arrange the rounds in a snake shape on a large platter. Make a head and tail out of the cucumber. Make the eyes using small circles of red pepper or sliced stuffed olives and attach using cocktail sticks.
- Cut a mouth in the snakes head and insert a strip of ham cut out to look like a forked tongue.
- TIP If you like you can decorate with upturned slices of kiwi with chives
Peanut Butter and Banana Sandwhich
- In between two slices and whole wheat break, smear a thin layer of peanut butter
- Peel and Cut banana into small circles and place on Peanut Butter covering layer.
- Eat and Enjoy
Berry Smoothie
Cut and place
1/2 cup of Strawberries
1 cup of Banana
1 cup of yogurt
1 cup or acai juice.
Rice Balls
3 cups hot cooked rice
1-2 teaspoons canola oil or cooking spray
2 cups finely chopped broccoli
1/2 small onion, finely chopped
5 mini red bell peppers, finely chopped
3 tablespoons Sushi vinegar
1 teaspoon sesame oil
2 teaspoons toasted sesame seeds
salt
Combine and Shape all into a ball
place or freeze in container for leftovers or longer lasting snacks
