Teen Discovery Teacher at Daphne Middle School
What’s your educational philosophy?
“Both of my parents were depression-era, college-educated people. It took my mother twelve years to work her way through college. (She must have really wanted that degree, huh?) So you see, education was heavily emphasized when I was growing up. I believe education is the “way up and the way out.” So stay in school and make the most of your time here.”
If you weren’t a teacher what would you want to be?
“I always wanted to make a difference in the world. I believe teachers do that. I am still naïve enough to believe that lawyers make a difference by helping people, too.
So I would be a lawyer. I went to law school late in life, but unfortunately, did not get to finish my studies there.”
If you could go anywhere on summer break where would it be?
“I would go out West or back to Europe. Europe was wonderful. I floated around for two years after that trip, it was that great!!”

How many years have you been teaching?
“I was a public library administrator before I went into teaching. I have been teaching for about thirteen years, ten of which have been at Daphne Middle,
so I am a relative newcomer to the field.”

Peer Helpers (Blake): Students are working on posters for the Special Olympics, and modules.
Choir (Trawick): Honk Jr. musical.
21 Century Skills (Pearson): Doing minimum wage presentations, and beta testing words with friends.
FACS (K. Taylor): Learning to write checks & balance check books. Sewing for the rest of the semester.
Art (Bittinger): Students will find an artist before creating a reproduction or spoof of a work.

Chef John's Classic Strawberry Shortcake
Ingredients

- 1/4 cup butter
- 2 cups self-rising flour
- 1/4 cup white sugar, plus more for topping
- 1/2 cup milk
- 1/4 cup heavy whipping cream, plus more for brushing
- 4 pints fresh strawberries, hulled and quartered
- 1/2 cup white sugar
- 3/4 cup heavy whipping cream
- 1 tablespoon white sugar
- 3 drops vanilla extract

- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
- Melt butter over medium heat in small saucepan. Stir continually, letting foam dissipate, just until butter begins to brown, 2 to 3 minutes. Remove from heat.
- Whisk together self-rising flour and 1/4 cup white sugar in a bowl. Add milk, 1/4 cup cream, and toasted butter. Mix just until ingredients come together. Wad up dough and transfer to floured surface. Press or roll dough into a rectangle about 1-inch thick. Cut in half lengthwise, and then cut each half into 3 portions. Place shortcake pieces on prepared baking sheet. Brush with cream; sprinkle with sugar.
- Bake in preheated oven until gold brown, 15 to 18 minutes. Transfer shortcakes to a rack to cool completely.
- Sprinkle sliced strawberries with sugar; stir until sugar begins to dissolve. Refrigerate until juice from berries is extracted, about 1 hour.
- Whip 3/4 cup cream with 1 tablespoon sugar and a few drops of vanilla in bowl with an electric mixer.
- Split biscuit in half. Place bottom half in a bowl. Spoon strawberries and juice over shortbread half. Top with shortbread top and spoon on more strawberries and juice over the shortbread. Finish with a dollop of whipped cream.

Athlete of the Week
Hamilton Baker
Hamilton is a very athletic person that has played multiple sports at DMS. Just in 8th grade he played soccer, basketball and football. Hamilton is a very busy person but helped all of the teams that he played for either by being athletic or supportive. Great job at being such an athletic person Hamilton!
