Chicken Fajita Salad

This is one of the easiest and least time consuming recipes you'll find out there. Not only does it taste great, but it is so flexible for a family. At our house we often use this as normal fajitas with healthy tortilla's or when we are watching our diet a little better we will use this as a fajita salad and keep the chips, tortillas and dairy to a minimum. It doesn't matter because this still tastes incredible.

The Recipe

1 orange juiced

2 limes juiced

3 T canola oil

2 garlic cloves pressed

1 jalapeno, seeded and minced

3 T fresh cilantro

1 T cumin

2 t salt

3 lb of chicken breast

Marinade chicken in mixture overnight, or all day and grill for dinner.

Grilling Tips

  • When grilling chicken the first thing to remember is that you need to cook the chicken to the right temperature - 180 degrees F for a whole chicken or 170 degrees F for chicken breast
  • Grease the rack - to avoid sticking while cooking chicken spray the grill with non-stick spray BEFORE you light the grill
  • Don't put sauces on until the last five minutes of grilling to avoid charring
  • Cook over medium heat to avoid charring
  • Sear the meat over direct heat initially then move to indirect heat to finish the inside and keep the meat juicy
