What are Nitrates in General?

Nitrates are salt or ester of acid containing nitrogen with negitive charged ion --> NO3- or the group –NO3. Nitrates can be found in bacon and a lot of foods like hot dogs, beef, and dairies. These items aren't to healthy in general because of fat, but since they contain nitrates it makes them even more less healthy.
