What's Happening at the Winery
Speaking of Trent, he's busy blending the 2019 red wines for bottling. That process takes a lot of tasting but he's good at that. Peter is usually there to help. He has a pretty good palette too. Blending takes a lot of work to determine the exact percentage of which wine goes with which other wine, to make a good blend. One of the versions they're working on is our #1 BLEND. I'm sure you remember that one. It'll be back on the menu soon.
The 2021 reds are getting their first "Rack and Back." That's a process where we siphon the clear wine off the top of the barrel leaving the sediment in the bottom. We clean the barrel sediment out and then put the wine back in the barrel. It takes a while to do this process because everything has to be cleaned along the way. This is the first Rack and Back for the 2021 reds. They'll go through that process a couple more times as they mature.
The 2021 white wines are settling right now. After fermentation, the solids in the wine need to slowly sink to the bottom of the storage vessel. We don't put our white wines into oak barrels. They stay in stainless steel tanks to mature, so they turn out nice and delicate to the taste. As the solids settle to the bottom, the wine gets ready for the Rack and Back process. Once the wine gets clear, it'll be ready for filtering and then bottling.
We had a GREAT Christmas Celebration at the winery. Many thanks to all of you who helped put the day together. There was food and wine and Santa and wine and fun and wine. What a day - we can't wait until next Christmas - well, maybe we can wait a short while. Here are a few pictures of the event. Thank you to everyone who attended.
