Hannah's Pictorial Mozzarella Basil Bruschetta

Recipe Introduction

This is a Bruschetta recipe I made in Creative Cooking Class in March of 2013. I chose this recipe because it is an easy and delicious appetizer for any occasion, especially Italian Meals. This recipe features a tomato- basil topping with mozzarella cheese.


The yield for this recipe is 12 servings.

Ingredients and Equipment


  • 6 slices Italian Bread (1/2 inch thick)
  • 2 Tablespoons olive oil
  • About 1 and 1/2 Large tomato (seeded and chopped)
  • 3 Tablespoons minced fresh basil (more or less to taste)
  • 1/4 teaspoon pepper
  • 1/8 teaspoon salt
  • 6 slices part-skim mozzarella cheese (halved)


  • Serrated knife
  • Paring knife
  • Baking sheet (ungreased)
  • Pastry Brush
  • Small bowl
  • Cutting board


1. Slice the loaf of Italian Bread in half and then cut each half of the loaf in 6 slices for a total of 12 slices.

2. Brush each slice of bread with olive oil.

3. On the cutting board, seed the tomato and chop into small pieces.

4. Also on the cutting board, chop the basil into very small pieces.

5. In a small bowl, combine tomato, basil, and salt.

6. Spoon 1 Tablespoon of tomato- basil mixture on each slice of bread and top with mozzarella.

7. Bake at 375 degrees for 10-12 minutes or until cheese is melted.


This recipe tasted delicious and was simple to make. The recipe originally called for 1 large tomato, but one tomato didn't seem to be enough. If I were to make this recipe again, I would use about 1 and 1/2 tomatos. The slices of mozzarella tasted delicious but would have looked better if the mozzarella cheese was shredded instead of in slices. You could also add garlic or onions if you so choose.
