When Aracena was ceded by the Crown of Castle to the Knights Templar, that Order authorized the raising of the current Moorish-style church, noted for the glazed clay sculptures of Pedro Vazquez and which takes its name from the local patron saint, Nuestra Señora del Mayor Dolor [Our Lady of the Greatest Suffering].

The church is emblematic of Aracena and is the oldest church in the town. It consists of three naves of equal height with its choir at the feet and a polygonal presbytery to which, on the side of the chapel, there is attached its Mudéjar-style tower.

Also in the town is the church of Santa María de la Asunción, built in 1522.

GROTTO OF MARVELS

A fount of beauty that never runs dry, created with two ingredients as simple as water and stone, over a period of millennia. Only after seeing this "Grotto of Marvels (Gruta de las Maravillas)" with one's own eyes can one appreciate how it came to be thus named.
Discovered by a shepherd in 1886, the Gruta de las Maravillas was the first cave in Spain to be dedicated to tourism, having opened to the public in 1886.
The total length of the Gruta de las Maravillas is over two kilometres, of which 1,200 metres is open to the public.
The tour starts in the Conch Chamber and leads you along the first level of galleries, where water is a feature, until you come to the Great Hall (the largest chamber in the Grotto). From there you go on to the Cathedral Chamber.
On this second level you can see a great number and variety of formations, as well as flooded gours. You drop down to the first level to view the Chickpea Chamber, the Bare Chamber and, once again, the lake, which continues all the way to the exit.
Amongst the fantastic formations you can see in the Gruta de las Maravillas are the following:
•Stalactites and stalagmites: formations that hang from the ceiling or rise up out of the ground, respectively, made by the dripping of water containing calcite. When a stalactite and a stalagmite join up the resulting formation is known as a column.
•Gours: "bathtubs", pits or pools which form in caves.
•Flowstones: these are produced in a similar way to stalactites and stalagmites but on horizontal surfaces over which water flows. They are of different shapes and colours determined by the mineral content of the water.
•Pisoliths: calcareous balls which are found in the pools of grottoes.
•Excentrics: as their name indicates, these are star-shaped, hedgehog-shaped, explosion-shaped, etc., formations.

Aracena's gastronomy, as that of the rest of the Saw, is rich and varied, due to the wide range of autochthonous food that it uses and to the technologies conserveras of the meat products, some of great ethnographic value.
Aracena's name is associated with the products derived from the Iberian pork: the loin, the sirloin, the secret, the dam of sternum, the castanets, the offal, the ribs, the ham of acorn, the cane of loin, the large black pudding and the rest of spiced pork sausages in general. Of all of them there are obtained exquisite lids, appetizers and the first plates and are associated with other typical products of the local gastronomy: the crumbs in autumn and winter - specially in the rainy days-, the in a mess ones of wild asparagus, the highland ratatouille, the winter gazpacho, etc

Due to the wealth micológica of the region, the mushrooms are present in Aracena's gastronomic offer during great part of the year: tanas (amanita caesarea), tentullos (boletus aereus), gallipiernos (macrolepiota procera) and pinateles or níscalos appear in the local kitchen in the shape of roasts, stews, in a mess, croquettes...

To the recent summit of the handcrafted industry of the cheese of goat, in his different modalities (fresh, cured, in oil ...) it has made possible that such a traditional product returns to recover his well-deserved prestige and his increasing presence in the local gastronomy.

If Aracena is known by the products derived from the Iberian pork, the mushrooms and the cheese, it is not less for his exquisite confectionary: the thin sweets, marzipans, bores, candy, the custard with burnt crust, the compotes of apple, pears, quince, the pottage of chestnuts, the chestnuts in liquor, in syrup, the apricots, poleas, meads, the ring-shaped rolls of Holy Week...

The must of the region in November and December, the tostón of chestnuts in the candle, the unmatured brandy of cherries and the liquors of mushrooms they complete Aracena's gastronomic offer and are a delight for the most demanding palates.
