WWURA NEWS
Welcoming retired WWU Faculty and Staff and others
September 2021
President’s Notes
Two weeks ago, I was standing in Fairhaven Park at the WWURA Summer Gala (picnic). I loved the great positive energy from people talking, eating, and sharing all while (mostly) maintaining social distancing. It is hard to not shake someone's hand or give them a hug. But this pandemic has taken another tum and it is critical that we focus on safety while still trying to bring people together. Oh... and by-the-way the food was great!
Later in September Sally and I will be heading to Washington DC to spend a few months taking care of our 3rd grandson until he is ready for childcare. While I'm gone Peggy Loudon has agreed to fill-in and run the meetings. Please contact her [peggylou99@gmail.com] with any questions or items for Board consideration after September 25th.
I plan walking the 5 blocks to the Supreme Court the next time they make a significant announcement. You might see me on the TV news.. .I'll be the fellow pushing the stroller.
The Board had hoped that we'd be able to begin more face-to face activities this fall... but the changing Covid situation will impact what we can do. Don't give up, the annual Holiday Party is still on the schedule at this time.
Please stay safe in the upcoming months... and part of staying safe is being in contact with others on a regular basis...meeting for a walk, a phone call on Sunday afternoon, or even a challenging game of Word Feud keep us from self-isolating. Reach out... everyone will be glad you did. And give thanks every day for the people you've met and the place we live in - exceptional.

TRAVELOGUE ANNOUNCMENT
David Carroll and Susan Donnelly take us to Greece and the Aegean September 15th, 4 p.m., by ZOOM. The program will be recorded.
Last month's travelogue with David and Susan ended with them "stranded" on their way back home from their around-the-world journey. Thus, at the end of what had been planned as their final episode, it was decided that we would do one more journey segment at the first opportunity in the fall. Susan and David will do a re-cap of the overall trip and then take us to Greece, their final stop.
We had hoped it would be in person at the yacht club, but currently that seems a bit risky. So, tune in Sept. 15th at 4:00 by Zoom. The link will be sent the day before. Hope to see you there.
October 20th - Gathering

COOKING FOR ONE (OR TWO)
by Suzanne Krogh
Our recipe this month comes from WWURA member Lynne Masland. It has been in her family for a few generations and is reminiscent of living in Florida when home cooks were inventing recipes that made creative use of the local semi-tropical ingredients.
This recipe, in fact, is similar to one my mother acquired when we moved from Illinois to Florida in the late 1940s. Here is Lynne to tell her own family's story
"My grandmother, whom we called Mama, was married to a physician and lived in Sanford, Florida; my mother was her younger daughter. This recipe was a summer favorite in Sanford.
Mama lived with us just outside of Boston while my father was serving on an aircraft carrier in the Pacific during World War II. I was about 3 or 4 years old then and loved cooking with her. On hot, humid evenings, this delicious salad was a dinner time treat that no doubt made her think of home in Florida."
Mama's Summer Salad For One
½ ripe (but not too ripe) avocado
1/3 can grapefruit slices
3 medium peeled and cooked shrimp
1 to 3 lettuce leaves (bibb or other flat lettuce)
Your favorite salad dressing
Instructions
- On a small plate, place one or more leaves of freshly washed and dried lettuce.
- Slice and peel the avocado. Place 3-4 slices on the lettuce.
- Arrange 3 slices of grapefruit around the avocado.
- Arrange the shrimp on top of the avocado and grapefruit.
- Top the salad with dressing and serve as a side dish.
Tips
- For an authentic, 1940s salad, use iceberg lettuce and top with either mayonnaise or Kraft's orange French salad dressing.
