Summary of Article

The rate at which children nowadays are gaining weight is increasing at an alarming rate. Some children are having trouble fitting into clothes designed for their age and size (children's clothes) and are even having trouble fitting into their desks and chairs at school. That's when you know something is very wrong.

Excercises for the Body, Heart and Mind:

Body:

V-Up: How To: Lie flat on your back, legs extended (but try not to snooze on the mat). Reach the arms overhead — à la first thing in the morning stretch — with a medicine ball in both hands. Engage the core to lift the hands and feet simultaneously so the body forms a “V” position. At the top of the “V,” pass the ball from the hands to the feet. Squeeze the ball between your sneaks, and slowly lower the arms and legs back down to the floor. Return to the “V,” and pass the ball back to the hands. That’s one rep. Wipe the sweat from your brow. Repeat for 8-10 more.

Heart:

Nordic Walking: (walking at a brisk pace with poles to increase full body workout while simply walking)

  • -Nordic walking burns about 20% more calories per hour than walking alone.
  • -Nordic walking elevates heart rate between 4.0% and 8.2% higher than walking alone.
  • -Although Nordic walkers burned more calories and used more muscle groups, they did not feel that walking with Nordic poles was more strenuous than walking without poles.

    Apple Muffins: (breakfast)
    • Cooking spray
    • 3/4 cup plus 2 tablespoons packed brown sugar
    • 1/4 cup chopped pecans
    • 1/2 teaspoon ground cinnamon
    • 1 cup all-purpose flour
    • 1 cup whole-wheat pastry flour
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt

    2 teaspoons light mayonnaise
    1/2 teaspoon prepared horseradish
    1 whole-wheat tortilla
    1 large romaine lettuce leaf
    3 slices lean roast beef
    1/4 cup chopped tomato

    Roasted Turkey breast with Apple cider Gravy (dinner)


    1 turkey breast (about 2 to 3 pounds), skin removed1 1/2 teaspoons canola oil
    DRY RUB:
    2 teaspoons finely chopped fresh flat-leaf parsley
    2 teaspoons finely chopped fresh thymeadd to shopping list
    2 teaspoons finely chopped fresh marjoram
    2 teaspoons finely chopped fresh sage
    1/4 teaspoon salt
    1/4 teaspoon black pepper
    GRAVY:
    1/4 cup turkey broth (from the pan drippings), plus extra chicken broth if not enough turkey drippings to equal 1/4 cup
    canola oil cooking spray
    1/4 cup finely chopped onion
    1/4 teaspoon finely chopped fresh sage (ground sage can be substituted)
    1/4 cup apple cider
    2 teaspoons all-purpose flour
    2 tablespoons fat-free half-and-half
    salt and black pepper to taste

    Dessert: Angel Food Cake

    • 1 3/4 cups sugar
    • 1/4 teaspoon salt
    • 1 cup cake flour, sifted
    • 12 egg whites (the closer to room temperature the better)
    • 1/3 cup warm water
    • 1 teaspoon orange extract, or extract f your choice
    • 1 1/2 teaspoons cream of tartar
