**2021 Cass County 4-H Fairbooks**
Please check over the 2021 Cass County 4-H Fairbook! There have been changes made to the schedule and project areas.
- Each club will receive one Fairbook free.
- Additional Fairbooks are $2.00 each.

The Cass County 4-H Council seeks to promote and support positive youth development and club experience for youth in Cass County through offering grants to support club efforts. Grant applicants are encouraged to identify needs of the county, club, members, leaders, and/or volunteers. 2021 CASS COUNTY PUBLIC SPEAKING CONTEST **REGISTRATION DUE TODAY!**
πThe Cass County Public Speaking Contest is scheduled for Sunday, April 11th @ 2 p.m. in the Cass County Fairgrounds Expo Building. Registration is due by Friday, April 2nd. Click here for full guidelines and registration information.

4-H Cooking 101
Cooking 101 - Improve and learn new skills in cooking and baking. PLUS, explore great new dishes! Youth will learn about MyPlate, how to stop the spread of germs in the kitchen, measure and mix ingredients, rate baked goods for appearance and taste, set the table for a family meal and delve into cooking basics. Fair entries: cookies, muffins, no bake cookies, brownies, granola. (Refer to your county fair book for more information.)
4-H Cooking Series Manuals
The 4-H cooking series include manuals for four different levels. The manuals provide content information, food science experiments, and a variety of classic recipes that are youth tested and youth/adult friendly. ANYONE can purchase the manuals online at: shop4h.org or check to see if you can buy them at your local Nebraska Extension County Office. The curriculum comes as loose-leaf paper, so be sure to purchase a binder to store the manual. Happy cooking!
4-H Cooking 201
Cooking 201 -Topics include understanding and preventing foodborne illnesses, thawing frozen foods, proper knife techniques, how to read Nutrition Facts labels, and how to make soups, rice, pasta, and other foods. Fair Entries: Loaf Quick Bread Creative Mixes, Biscuits or Scones, Healthy Baked Product, Coffeecake, Whole Grain baked product, nontraditional baked products. (Refer to your county fair book for more information.)
Cooking 301
Cooking 301 -Youth practice making bread, grilling meats, vegetables, and fruit, and making butter. Youth learn about yeast, gluten, and different types of fats. Fair entries: White Bread ,Whole Wheat or Mixed Grain Bread, Specialty Rolls, Dinner Roll, Specialty Bread, Shortened Cake. (Refer to your county fair book for more information.)
Cooking 401
Youth learn about herbs and spices and how to make ethnic foods. Youth also practice making cakes, candy, pastries, and pies. Fair entries: Double Crust Fruit Pie, Family Food Traditions, Ethnic Food Exhibit, Candy, Foam Cake, Specialty Pastry. (Refer to your county fair book for more information.)

Ft. Robinson Horse Camp Program
A 4-H Horse Camp that will take place on June 10-12 at Fort Robinson State Park in Crawford, NE. All individuals, ages eight and older, are welcome to attend with activities for junior, intermediate, and senior / adult. The 4-H code of conduct will be in effect but membership is not mandatory. 2021 Fonner Park 4-H State Horse Expo
The State 4-H Horse Program would like to notify counties and their 4-H families to book their hotel reservations soon if they plan to attend/participate at the 2021 Fonner Park 4-H State Horse Expo. This year the Horse Expo (July 10th - 14th) is scheduled on the same dates as the National Jr. Angus Show. Since both events are happening at the same time, we HIGHLY recommend families are notified about the limited hotel availability during the state horse show. We would like to give families plenty of warning so they are not struggling to book hotels closer to our event. More information can be found here: Book your group rate for State 4H Horse Show

Online Horticulture Judging Contest
Do you know what it takes to pick the best fruit and vegetables out at the grocery store? Or do you know what judges are looking for when they judge your plants at the county fair? Cass County 4-H Ambassadors took over UNL Campus last weekend! Shawn, Marissa and Jenna along with 22 other 4-Hers from Dakota, Sarpy/Douglas, Nuckolls, Thayer, and Washington counties learned how to be excellent spokespeople for Nebraska 4-H. Be on the lookout for these three putting their skills to work this summer π
