Pumpkin Muffins


2/4 cup gluten tree plain flour

3/4 cup buckwheat flour OR gluten free oat flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon mixed spice

Pinch of salt

2 eggs

1 cup pumpkin pure (if needed use 1 tsp of flour)

1 cup of unsweetened applesauce

1/2 cup honey

2 teaspoons vanilla

Directions To Make Recipe

Mix all of the ingredients together, stir them into a liquid batter, and finally put the batter into the muffins tins and cook for about 15 minutes. After, the oven is preheated to 350 degrees.

Recipe's Density

I believe that this recipe for pumpkin muffins is maybe not low or high nutrient dense, but in the middle. Because the ingredients are not bad or good for you they are in-between. For example, honey may not be the best for you but the unsweetened applesauce has to be okay for the body system intake.
