Sipping Up Summer
Ingredients:
- 2 cups raspberries
- 1/2 cup sugar or honey
- 1 cup water (Note: This recipe makes about 2 cups of puree and you only need to put 1-2 tablespoons into each cup, so the 1/2 cup of sugar or honey will be divided into about 20 cups of limeade. If you prefer, you could also add more raspberries and decrease the amount of sugar/honey.)
- Limes
- Sparkling water
- Lime essential oil
- Ice
Directions:
- In a small saucepan, combine 1 cup water, 1/2 cup sugar or honey, and 2 cups raspberries.
- Cook until sugar has dissolved. Cool and strain.
- To serve, add raspberry puree (around 2 tablespoons), ice, juice of one lime, and 1-2 drops Lime essential oil to a glass.
- Top with sparkling water.
- Garnish with limes and raspberries. Enjoy!
Summer {Trim} Treats
We make smoothie popsicles often (using fruit, leafy greens, doTERRA's V-Shake, Terragreens, and Wild Orange oil), and now I look forward to being able to offer a chocolatey cold treat that is much lower in sugar than typical fudgesicles and provides vitamins, minerals, and protein. I will also experiment with adding Peppermint or Wild Orange oils.
What You Need:
- 1 14-ounce can coconut milk, or 1 3/4 cup milk of choice
- 1 teaspoon vanilla
- 2 tablespoons honey
- 3 tablespoons baking cocoa
- 3 scoops Chocolate TrimShake
Directions:
- In a large bowl, combine all ingredients.
- Beat until smooth.
- Pour into popsicle molds and place in freezer with popsicle sticks inserted into the middle.
- Let them freeze overnight. Remove from mold and enjoy!
Place popsicle mold under warm water for a few seconds to help fudgesicles come out more easily.
Chicken Taquitos
6-8 chicken tenderloins
2 clove garlic, minced
1 drop of cumin oil
1 Tablespoon chili powder
1/2 teaspoon coriander
1 1/2 teaspoon salt
1/4 teaspoon paprika
1 Tablespoon olive oil
1/3 cup reduced sodium chicken broth
1 drop Black Pepper essential oil
1 large chopped onion
Juice from 1 lime
1 Tablespoon juice from jarred jalapenos (optional)
1 drop Lime essential oil
Corn tortillas
Shredded cabbage
Diced tomatoes
Sliced avocado
Cilantro lime sour cream
Directions:
Heat the oil in a medium sized saute pan. Add the onion and saute for 5 minutes. Add the cumin, chili powder, coriander, paprika, and garlic and saute 2 more minutes. Deglaze the pan with the chicken broth making sure to scrape up any brown bits. Turn off and set aside. Sprinkle the chicken with salt and add Black Pepper essential oil. Add to crock-pot. Squeeze the lime on top and pour the onion and garlic mixture over top. Add jalapeno juice if desired. Cook on low for 3-5 hours, or until cooked through (different crock-pots at varying heats) and tender. Remove chicken breasts from the crock-pot, shred, and place in a bowl. Scoop out the onions and add to the chicken. Depending on the amount of juices produced, you may want to add some or all of the juice back to the shredded chicken. Over medium-high heat, cook tortillas one at a time until soft, about 30 seconds on each side. Fold over to make a taco shell. Spoon meat into shell and top with shredded cabbage, tomato, avocado, and cilantro lime sour cream.
